Cinco De Mayo

Happy Cinco de Mayo everybody!!

In case you didn't know, Cinco de Mayo literally translates to Spanish for "fifth of May" and is celebrated in the USA and Mexico. It originated with Mexican-American communities in the American West to remember the cause of freedom and democracy during the first years of the American Civil War. Today the date is observed in the United States as a celebration of Mexican heritage and pride. In the state of Puebla, the date is observed to commemorate the Mexican army's victory over French forces at the Battle of Puebla on May 5, 1862, but this holiday is really more about celebrating the Mexican way of life than about remembering a battle which happened 150 years ago.


In Puebla and in many USA cities with large Mexican populations, there are parades, dancing and festivals. Traditional Mexican food is served, Mariachi bands fill town squares, and a lot of Dos Equis and Corona beers are served (with a lime of course). All in all it’s a fun holiday to get together with family and friends, eat yummy Mexican food, and drink a nice cold Mexican beer. 

I love that Mexican food is always full of flavor. One of my favorite dishes is fish tacos, don't get me wrong I like all types of tacos but nothing beats a fresh fish taco, here is a recipe that is fun to make and delicious!


Ingredients:
-Fish

  • -chili powder-4 tsp
  • -lime juice-2 tbsp 
  • -extra-virgin olive oil-2 tbsp
  • -ground cumin-1 tsp
  • -onion powder-1 tsp
  • -garlic powder-1 tsp
  • -salt-1 tsp
  • -freshly ground pepper-1/2 tsp
  • -mahi mahi or Pacific halibut, skinned, and cut into 4 portions-2 lbs
-Coleslaw
  • -reduced-fat sour cream-1/4 cups
  • -low-fat mayonnaise-1/4 cups 
  • -fresh cilantro, chopped-2 tbsp
  • -lime zest- 1 tsp
  • -lime juice- 2 tbsp
  • -sugar- 1 tsp
  • -salt-2/3 tsp
  • -Freshly ground pepper to taste
  • -red or green cabbage, finely shredded-2-3 cups
  • Taco Shell-12 corn tortillas, warmed
